2018 Sauvignon Blanc

Knights Valley, Sonoma County

The grapes for this wine were pressed at 100% whole cluster for vibrant fruit intensity. The juice settled for two days before it was racked into a combination of concrete eggs, stainless steel and French oak puncheons, and barrels for fermentation. Sur lie aging for five months with batônnage (lees stirring) then once a week.

The 2018 Galerie Equitem shows explosive tropical aromas of lime leaf, lemongrass, green melon and a mineral finish combined with hints of Asian pear and oyster shell minerality. The palate is juicy, with a fresh acidic finish full of flavors and texture.
